Live Really Well on Potatoes

I was at the grocery store Saturday, definitely not Sunday, and I saw a woman who bought only one 10 lb. bag of potatoes. I told her she could live really well on potatoes. She said “and on rice and beans.”Roasted Potatoes

I told her that was really good. I didn’t know if she was being extra healthy, just poor, or trying to get out of debt by eating more cheaply. Then, she said that she wished they were cheaper.

One bag of potatoes like that could possibly feed a family of four on $7 for a couple of weeks, I think. And, there are many fun ways to prepare them; baked fries, baked potatoes, vegan scalloped potatoes, mashed potatoes, soup with potato cubes, and baked potato wedges.

There are so many things that you can do with potatoes and you will never get sick of them.

You can also cut and bake them with barbeque seasoning sprinkled on. Then, there is potato milk, which tastes really good. I had some when I was a walking guide at National Institute of Fitness.

The nutrition in potatoes is sufficient for humans to do well for months, stay healthy, and still want more.

For instance, he said that if he were stranded on a deserted island and had the choice of only one food to eat, he would choose potatoes. He says that potatoes are full of every vitamin, mineral, protein, and wholesome complex starch that a person needed for good life for a long time.

He also says that studies have actually been done on humans to show that people who eat only potatoes for six months are in excellent health and still like potatoes at the end of the study.

He tells about an orphanage in Peru where the children and babies were given nothing but potatoes and potato milk. And, they all grew normally.

There have been times of famine in other countries where people have eaten only potatoes. The result? They end up with better health, lower cholesterol and trim bodies.

Potatoes have the perfect nutrition according to Dr. McDougall, who is the potato authority today. So, even if you are poor, you can enjoy a good life.

If you are trying to get out of debt, potatoes are a really good way to go. And, if you are just a health nut, like me, you don’t need to feel guilty at all to enjoy something so good for you. Not only all of that, but you can lose weight healthfully by eating potatoes.

In chapter 89, verse 16 of the word of wisdom at this link, we read that things “in the ground” are good for the food of man as well as other grains, fruits, and herbs above the ground. All of these foods have been given us to eliminate the cause of pain and disease and to promote the ability to “to run and not be weary and to walk and not faint,”.

The inspiring thing about all of this is in looking at this woman who seemed too financially deficient to buy anything but potatoes. Who knows maybe she was a millionaire just pinching pennies to stay rich.

Today, many people are short on money and if this is the case, then you should count your blessings if you have enough that you are also able to have more variety. You might think of sharing some to help others.

By looking at the glass half full and reaching out to others in need, you will do more for your health than visiting a psychotherapist. You can live really well on potatoes.
