Vegetarian Apple Pizza

This apple pizza is a lot like apple pie, but in the form of a pizza. It would make a good breakfast or healthy dessert item, great for energy and good digestion (if you’re not gluten sensitive). This particular recipe is vegan, high fiber, no-fat, tasty, and  low-calorie.

And, by the way, if you don’t want to become gluten sensitive, stay away from white flour products as much as possible. Too much of that and over time, you or your children or grandchildren will become gluten sensitive. Always stick to whole-grain cooking or baking as much as possible. The extra fiber content in whole wheat flour helps with better digestion and weight loss.

Vegetarian Apple Pizza from the book Lighten Up! by Louise Hagler revised slightly by Janet Hailstoneapple pizza piece

  • For the crust:
  • 1/4 cup raw organic sugar
  • 1/3 + 1/4 cup boiled water that is still really warm
  • 1/2 Tbsp instant dry yeast
  • 1 Tbsp olive oil (opt.)
  • 1 1/2 cup unbleached whole wheat pastry flour (or gluten free flours)
  • 1/4 tsp real salt
  • For the filling:
  • 6 cups thinly sliced apples (Gala were used in the video)
  • 2 Tbsp fresh lemon juice
  • 1/4 cup raw organic sugar
  • 1 Tbsp unbleached whole wheat pastry flour (or gluten free flour)
  • 1 tsp cinnamon
  1. Prepare the crust by putting all of the crust ingredients in small food processor bowl and mixing with the kneading hook until formed into a workable dough.
  2. Put a greased bowl (use a napkin to rub about 1/2 tsp oil in the bowl) with the dough and a towel covering in a warmed oven. Turn off the heat and let the dough rise. It might take about an hour to double in size.
  3. Prepare the filling by washing, peeling, and thinly slicing the apple, then cut slices in half. Add the rest of the filling ingredients and mix all in a bowl until the cinnamon and juice covers all the apple pieces.
  4. Preheat oven to 400 degrees for 5 minutes.
  5. Spread the dough onto a greased 12 inch pizza pan and let bake at 400 for 5 minutes.
  6. Remove from the oven and cover with the apple filling. Bake at 400 for 13 minutes. Serve hot or cold.

I was wondering if I could use dates instead of sugar in the pie recipe and if so, how many dates?

If you want to use dates for the sweetener, then you would use 1/4 cup date sugar in place of the raw, organic sugar or even 1/4 cup blended-up dates. Date sugar would definitely be even healthier. You can buy date sugar at the health food store that is basically dehydrated and powdered.

However, if you have your own dates at home that you want to incorporate, it will be trickier. You’d need a food processor or a way to totally mash them. You’d probably want to make sure that all of your dates are pitted and you’d also have to use a sufficient amount to process them – say about 1 cup. You wouldn’t be using the whole amount, but you could refrigerate some for later use.

Raw, organic sugar is natural and minimally processed from sugar cane. It is amber color and has minerals. So, don’t feel bad about using it.
